Jaeger Eintopf

This is a wonderful casserole or Auflauf, even though it is called Eintopf,
That is like an American Shepherds Pie.
done in a German style

Apple Nudeln Auflauf

What a wonderful idea to blend fruits with noodles and a sour cream custard, to make a side dish, or dessert, or whatever you want.

 

Sometimes when I dig into these old German kitchen traditions, I catch myself saying, “Wow… they really cooked differently than we do.”

I was looking at these old Auflauf recipes and realized something I’d never really thought about: they layered everything instead of mixing it all together. Potatoes went on the bottom,

then the noodles or ham, and the cabbage or other quick‑cooking vegetables on top. And the more I looked at it, the more it made perfect sense.

Most families didn’t have an oven at home back then. They’d build their casserole at the kitchen table, cover it with a cloth, and carry it down to the village baker.

His big wood‑fired oven was cooling after the bread came out, and that gentle, steady heat was perfect for these layered dishes.

Putting the potatoes on the bottom meant they sat closest to the hottest part of the oven floor, where they could actually cook through. The lighter vegetables went on top so they wouldn’t turn to mush. It’s simple, practical cooking — and honestly, pretty smart.

I like to imagine what that must have felt like… walking through the village with a warm dish wrapped in a towel, trusting the baker’s oven to finish the job. No timers, no dials, just experience and rhythm. Maybe that’s why these casseroles still feel so comforting today. They’re built the way our ancestors cooked: with layers, with thrift, and with a whole lot of heart.

 

 

Schinken Nudeln Auflauf

Schinken means ham in German and Nudeln is of course Noodles

What is an Auflauf???

Auflauf is the German word for casserole,
and a really fun word to say;

Owwff- Louffff

So how is the German Mac and Cheese different

First the Cheese

Emmentaler Cheese

 

 

Gruyere

Shinken Nudeln

 

Next they like to use quark or sour cream in their German mac and cheese or auflauf.
Wow it makes a really creamy nice texture to your casserole.
Quark is different than yogurt and milder than a sour cream, It is hard to find in America but you
can make your own.

Schinkenfleckerl Auflauf

Shinken = ham Fleck = spots or flecks either Schinkenfleckerl, Schinkenfleckern

What is Shinkenfleckerl or Fleckern ? Ground ham but why grind the ham?

Well the advantage of this is you can use any small bits of sausage,
ham or bacon and this mainly flavors the nice sauce.
It is easy to do you just use your food processor.

Saute them up and blend with the noodles for flavor.

Kaesespaetzle

Kaese = cheese , Spaetzle = small baby dumpling

A Swabischer Auflauf

Kaesespaetzle is a well known dish and it really doesn't take that long to make.
Spaetze is particuarly well known in the state of Swabia Germany,
where my grandma grew up, so it is very dear to me.

These little dumpling-like noodles are easy to mix shredded Emmental or Gruyere cheese (or both)
and top with fried onions.

Again you can mix in some sour cream and even an few eggs and bake so it sets up.

Jäger Eintopf
Layered German style shepherds pie.

Jäger Eintopf literally means a one pot hunters stew. Often when you see Jäger on a recipe it means it has mushrooms, like Jägerschnitzel.

This is very similar to a Shepherds pie, only done in a German style.

Meatless Auflauf?

You can of course substitute vegetables, or mushrooms instead of meat in your Auflauf. You can also use fruit.
Apples, or reconstituted plums or raisins make a nice side dish.

Apple Casserole
This makes a good entree as well as a side dish.

most recipes for this use bread, and it is similar to a bread pudding.

Apples, rum soaked raisins and noodles baked with a sour cream filling.

Biography of my grandma
Emma Block

From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
