Zimtsterne
(Cinnamon Stars)

 

Ingredients;

3 egg whites
2 cups confectioners sugar (approx. 240g or approx. 250g depending on density
1 and 1/2 Cups Ground Almonds (approx. 180g or 6.35 oz) (a little more than 1/3 lb or 6 oz)
(A nut grinder is preferred or pulse on a food processor. Don't turn them to mush!)
Grated zest of 1 lemon (about 2 tsp. lemon zest)
2 tsp Cinnamon (approx. 4g)
Sugar and flour for rolling out (as needed)

Directions:

1. Whip the egg whites till they form peaks

2. Gradually add the sugar into the stiff egg whites.

3. Remove a good half cup of the mixture and reserve to a bowl. This will be the topping that you brush onto the cookie.

4. Add the ground almonds, lemon zest, cinnamon and blend.

5. Form into a dough.

Sift some flour and sugar onto the work table.

Roll out the dough to about 1/4 inch thickness.

First loosen the dough if it is stuck to the board and
put onto a freshly sifted area to prevent sticking.

6. Cut out stars with a star cookie cutter.

7. Brush stars with the egg white mixture. this can take
a bit of practice to get right. Lift the stars carefully
onto a sprayed cookie sheet or lined with parchment
or a silpat.

It can be difficult to spread on the icing and make it look good without going over the edges.
I first thought it would work better to put on the icing and then cut the star out.
That didn't seem to work for me, so I found it easier to do spread it on the individual stars.

8. Bake stars at 325 degrees till they are lightly browned on top, about 20 minutes.
