Apfelküchle

Apple slices breaded in Streusel and baked in the Air Fryer

Apfelküchle is similar to an apple fritter in America except that an apple fritter is diced apples blended in a
sweet dough batter. These are rings and you can either batter them and fry them in oil
which is traditional, or you can bread them in a Streusel mix which is what I have done here so you can bake
them nicely in an Air Fryer to reduce the amount of oil.

In parts of southern Germany, especially Swabia and Baden‑Württemberg, it’s long been tradition to serve Kartoffelsuppe alongside Apfelküchle. Farm families leaned on what they had in abundance — potatoes in the cellar, apples in storage — and this combination offered both comfort and practicality. The warm, savory soup filled you up, while the crisp, cinnamon‑sweet apple fritters added a touch of celebration to an otherwise simple meal.

This pairing also fit neatly into the region’s Catholic meatless Fridays and Lenten meals, where a hearty soup and a sweet dish made a satisfying, affordable supper. Over time, it became a beloved school‑canteen and home‑kitchen favorite, remembered for its contrast of flavors: creamy potatoes and golden fried apples, humble ingredients elevated by tradition.

Ingredients:

2-3 Apples (Firm or Sweet and Tart)

water with lemon

First dip:
1/4 cup Cornstarch (you may use flour)

Streusel Breading:
1 cup AP Flour
1/3 cup Sugar
2 tablespoons Butter
1-2 teaspoons Cinnamon

Dip:
1 egg
1/4 cup Sparkling Water

Peel the apples ...

Slice the apples and core them with a melon baller. A spoon will work as well.

Keep the slices in a bowl of water with a little lemon juice. Bottled lemon juice works also.

Mix the Streusel ingredients just a litte of the butter at a time.
if it is too clumpy add more flour and a bit of sugar so it is the consistency of flour
otherwise it won't bread.

 

This shows the set up for breading the apple slices.
1. Take the apple slices from the water and dip it in the cornstarch (or flour) on both sides.
2. Dip the apple slice in the egg batter mix coating it completely.
3. Dip the apple slice then in the Streusel and coat it completely.

Put the breaded apple slices on your air fryer tray. I cut out a piece of parchment paper, you can also use a silicone mat.
Keep some distance between the slices so they can brown evenly.

I baked these on 375 degrees for about 10 minutes. But this depends on your air fryer. You can also use a regular oven bake at 400 degrees for 15 minutes. You can brush them with butter or spray with non stick spray or oil to enhance the browning.

These slices are great with hot or cold. They are also are a traditional side dish for
German Potato Soup.

This is a battered version done by my German friend Simone.
The Potato soup is slightly pink, because of the addition of
a bit of tomato and paprika.

Biography of my grandma
Emma Block

From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
