German Potato Wurst Salad
with Beer Dressing
This is a good example of German seasonings.
The addition of onions simmered with beer is such a good way to flavor a roast, or bratwurst.
Ingredients:
4 potatoes boiled, peeled and cubed
1 lb Ring Bologna sliced in half circles
2 slices of bacon
1 medium onion chopped 1 / 4 inch dice.
1 cup chopped colored bell pepper.
2 green onions chopped
Dressing:
1/4 cup water
1/4 cup apple cider vinegar
1 /4 cup sugar
1 cup German beer ( any beer will give a distinct flavor )
1 tablespoon Whole Grain Mustard
Directions:
1. Gather your ingredients together, I boiled and cubed the potatoes,I microwaved the vinegar, water and sugar together for a minute or so to help dissolve the sugar. Chop the vegetables and parsley, then gather the rest of the ingredients.
2. Saute the bacon and Onions till soft.
3. Add about a cup of the beer.
4. Add the vinegar sugar solution to the dressing, then the mustard.
5. Add the dressing to the potatoes. It is better if the potatoes are warm. warm them in a pan or microwave and put in the bowl.
6. Toss the potatoes and dressing, then add the chopped peppers, green onions and ring bologna, (or other Wurst).Finally chop the parsley and blend in.
7. This is best served at room temperature, although any way, warm, cold or just as is
makes a full summer nights light meal, with a little bread, and kuchen, maybe some soup as well.
This is also great to serve on a bed of greens, for a well rounded meal.
