Rolf peeled and cut the potatoes into chunks in a bowl of water. The water keeps them from going brown.
Crack 2 eggs into the blender.
Next add the onion and some of the potato chunks.
Keep a hand on top of the blender and blend it on high speed till it is pureed. Once it is pureed you can add more potato chunks a little at a time.

When it is fully pureed then you can pour it out into a bowl
Rolf added about 3 Tablespoons of flour. I would suggest adding one tablespoon at a time and mixing it in. You want to get a nice smooth batter but not too thick. Add the baking powder. If the first pancake you fry is too thick or too runny, add water or flour to get the consistency right.
We are ready to fry.
Heat a non stick skillet to medium heat and add about 1 / 4 cup Canola oil.
You can see that the batter is thick but pours nicely into the pan. After the first set of pancakes
you won't have to put in as much oil.
The pancakes Rolf does are oval shaped because you get more nice crisp edge to them. You can make any shape that you want.
We stacked the pancakes on a plate and kept them warm in the oven.
Serve with applesauce, or sour cream , apple compote, or even catsup.

Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
