Feinkost Geflügelsalat
(German Chicken Deli Salad)


ingredients:

3 cups cooked chicken breast, cut into small cubes (450 g)

1½ cups *Feinkost-Creme (360 g)

½ cup pineapple tidbits, well drained (75 g)

½ cup canned mandarin oranges, drained and cut in half (75 g)

2 tablespoons diced walnuts (30 g)

10-15 marachino cherries cut in half

2 stalks of celery sliced thin or diced

1 teaspoon fresh lemon juice (5 ml)

1 teaspoon mild Dijon or German mustard, optional (5 g)

1.5 teaspoon curry powder (5 grams)

¼ teaspoon white pepper (0.5 g)

Salt to taste

*The Fienkost Creme is a blend of equal parts mayonnaise and cottage cheese blended. You can use juist mayo or a blend of mayo and sour cream also.

Instructions

Cut the cooked chicken into small bite-sized cubes about ¼ to ⅜ inch (6–10 mm) in size. Drain the pineapple, mandarin oranges, marachino cherries well and gently pat them dry with paper towels so they don't thin the dressing, or the cherry juice doesn't discolor it.

In a large bowl, combine the Feinkost-Creme, lemon juice, mustard, curry powder, and white pepper until smooth.

Fold in the chicken, apple, pineapple, mandarin oranges, walnuts, and chives. Stir gently until everything is evenly coated while keeping the fruit intact.

Taste and adjust the seasoning with salt and additional white pepper if needed.

Cover and refrigerate for at least one hour before serving to allow the flavors to blend.

Serve chilled as part of an Abendbrot with slices of rye bread or fresh Brötchen, or spoon onto lettuce leaves for a light luncheon plate.
