Ingredients:
For the Stock:
1 Ham Shank
2 quarts Water or Chicken Stock
3 Bay Leaves
6 Peppercorns
3 Cloves
1 tablespoon Onion Flakes
For the Soup:
Suppengrun,
2 cups chopped Leek
2 cups chopped Celery Heart, with green tops (stalks)
2 cups chopped Carrot
handful of chopped Parsely
6 cloves fresh Garlic
4 strips Bacon chopped
1 cup Green Lentils
1 cup Red Lentils
2 tablespoons Hungarian Paprika
Salt and Pepper to taste
Toppings for the lentil Soup:
1 lb Sausages; like
8 oz Smoked Bratwurst
8 oz Weisswurst
4 cups roughly chopped Cabbage
3 -4 Yellow or Red Skin Potatoes
Serve with a nice sprinkle of Vinegar.

Why a Lentil Stew
with
Sausage , Cabbage and Potatoes
on New Years Eve?
My relatives from Germany came from a place where Dec 31 was very cold and the fire had to be stoked to stay warm.
This was a time when there waa no central heating, Refrigeration, and no social security, no supermarket where you could get what you
needed and if you were short. Not even credit cards!
My German family in 1930. My Grandma came over in September of 1904 from Germany on a boat seeking new hope.
With no science or internet I feel quite sure they engaged in plenty of good luck symbols to deal with the
uncertainties of the new year.
I look at some of the lucky tokens or charms that are German and find them interesting.
In the states
we have 4 leaf clovers, upside down horseshoes, rabbits feet, that are common.
Families and their cultures develop more personal ones.

Sourcing the products is fun also.
For the celebration you should use
I used a blend of the Green Lentils and Red Lentils
The Green Lentils are whole and will keep their shape.
The red lentils are split and will breakdown and slightly thicken the soup.
The Beluga and French (Pois Puy) will also hold there shape
even better, but they are more expensive.

French Green Lentils (Pois Puy)
Hunza Organic French Lentils (2 lbs)

Red Lentils
Iberia Red Lentil Beans, 12 Ounce |
First I make the stock with a ham shank ( not a ham hock) and then I use 3 quarts water, and simmered it for 2 to 3 hours
In the morning.

Make the Suppengruen
(ZUPPen-groo-en)
Cut the carrots into half wheels.

Cutting the Celery Root |
I can look a little daunting at first, how to clean,
how to peel and how to cut. |
One way is to trim the end off so it sits flat or cut it in half so it can sit flat on the cutting board. Then you can trim the skin off. |
If you have a good peeler tool you can use that. |

Cut the leeks into small pieces |
The Suppengreun is ready for the soup.
I reserve the chopped parsley for the finish. |
Mince up the garlic |
Saute the diced bacon in a nice large pot or Dutch oven till some fat is rendered.
Add the garlic and saute to open up the flavors. |
Saute the vegetables (Supengrun) for a few minutes to coat with the oil and flavors and soften a bit.
Lots of folks put the parsley in the suppengruen, I chose not to this time. |
Add the stock and simmer for 20 min until the vegetables are getting tender. |
Add 1 cup of each of the red and green lentils.
Put the potatoes on to boil in another pan and boil till tender about 20 min. |
Simmer on low for another 20 min and turn off the pot. You don't want the lentils to overcook. |
Brown the sausages....
.... and after that I will saute the cabbage in a the leftover fat with salt and pepper. |
I scored the top of the Ham Shank and broiled it in the air fryerl for 10-15 min to crisp the skin. |

You can be as creative as you want in the way you display the Lentil Stew Gleucksbringer
It's nice to top of a bowl Lentil stew with a sprinkling of vinegar
like some like to do with fish and chips. Any good vinegar will do.
Don't add it to the lentils while they are cooking, as it may toughen them.

Enameled Cast Iron Dutch Ovens
Why should you buy an expensive cast iron dutch oven that
has been enameled?
The biggest purpose of the enamel in my estimation is that it won't react
to acidic foods, so it won't discolor them. You can also marinate in them, they won't rust on you.
What to Look For in an Enameled Dutch Oven?
The go to name for enameled Dutch ovens is of course Le Creuset.
It seems ridiculously expensive. WHY so much.
Well in reading it seems like their enamel is a higher quality than the cheaper ones. zz
Le Creuset is a 100 year old company in France, using the highest quality techniques
in making cast iron and enameling techniques. It is meant to last generations
and has a limited warranty against chipping of the porcelain.

Biography of my grandma
Emma Block
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
