Spicy Asian Iceberg Lettuce Wraps
|
1 lb. boneless, skinless chicken breasts, cubed
1 lb. pkg Frozen stir fry vegetables
or 3 cups of 1/2 inch dice bell pepper, onion and celery.
2 T. chili-garlic sauce
2 T. soy sauce
3 T. oil
2 garlic cloves, minced
1/3 cup peanuts, chopped
2 T. finely chopped cilantro
1/4 cup green onions, chopped
1 T. sugar
2 T. peanut butter
2 T. water
8 lg. leaves Iceberg lettuce
1 1/2 c. grated carrots |

Directions:
Cook chicken in oil, add stir fry, then sauces, garlic, sugar, peanut butter and water. Mix remaining ingredients and place in lettuce leaf. Serve immediately.
