German Eggs with Mustard Sauce
(Senf Eier)
Just make a bechamel (white) sauce (basic and add german mustard to taste. You can, add some caraway if you like.
Soft boil you eggs until semi-hard (plaumenweich, which means basically like a plumb) This takes about 7-8minutes.
Put them under cold water, peel and add to sauce and serve.
We would sometimes top them off with some fried onions!
