Potato Wurst Salat
(Old German Style)

Ingredients:
4 Potatoes boiled, peeled and cubed in small dice
1 lb Ring Bologna sliced in half circles, or other Wurst
2 slices of Bacon
1 medium Onion chopped 1 / 4 inch dice.
1 cup chopped colored Bell Pepper.
2 green Onions chopped
1/4 cup chopped Parsley

Dressing:
1/4 cup Apple Cider Vinegar
1 /4 cup water
1/4 cup Sugar
1 tablespoon whole grain mustard
1 cup German Beer ( any beer will give its own distinct flavor )

Gather your ingredients together, I boiled and cubed the potatoes,I microwaved the vinegar, water and sugar together for a minute or so to help dissolve the sugar. Chop the vegetables and parsley, then gather the rest of the ingredients.

Saute the bacon and Onions till soft.

Add about a cup of the beer.

Add the vinegar sugar solution to the dressing, then the mustard.

Add the dressing to the potatoes. It is better if the potatoes are warm. warm them in a pan or microwave and put in the bowl.

Toss the potatoes and dressing, then add the chopped peppers, green onions and ring bologna, (or other Wurst).

Finally chop the parsley and blend in.

This is best served at room temperature, although any way, warm, cold or just as is
makes a full summer nights light meal, with a little bread, and kuchen, maybe some soup as well.

This is also great to serve on a bed of greens, for a well rounded meal.

Biography of my grandma
Emma Block
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
